Low-carb zucchini fritters that are too delicious to be healthy
Zucchini Frittersare ideal for a quick and simple snack, light meal, accompaniment, or even a breakfast addition. They are low in calories, low in carbohydrates, extremely simple to prepare – and an excellent method to incorporate some vegetables. Garnish with sour cream, cheddar cheese, or perhaps green onions. When I imagine a fritter, my thoughts go to "apple frittersBut in this instance, we're using shredded zucchini and combining it with a mixture of onion, flour, egg, and fresh herbs, then deep-frying them until they turn golden and crispy. These crunchy zucchini fritters are an excellent way to use up all the summer zucchini that's taking over your garden! Since we're only using a small amount of flour, rather than breadcrumbs...they're also naturally low in carbohydrates!

Make Fritter Batter
Grate zucchini into a large bowl (I use a medium one, but you can also use a food processor). Put the grated zucchini into a clean tea towel or paper towels and press out any extra moisture, twisting until you remove as much liquid as possible. You should end up with approximately one cup of zucchini. The zucchini is prepared when you have removed as much water as possible. We need dry zucchini for frying.
Put the zucchini in a big bowl. Mix inonion, egg, general purpose flour, baking soda, salt, freshly ground black pepper, parmesan cheeseand any herbs until combined.
Fry the Fritters
Over medium to medium-high heat, melt 1 tablespoon of olive oil and 1 tablespoon ofbutter In a large skillet, drop the batter by tablespoonfuls into the hot pan, pressing it down to form circles 3-4 inches in diameter and 1/4-1/8 inch thick.
Cook for about 1 minute until the bottoms become dark brown, then turn them over. Lightly press down. Continue cooking for an additional 30 seconds, then transfer to a plate covered with paper towel to absorb any extra oil, andseason with more salt. Melt more oil and butterplace into the hot pan and continue until all the batter is used up.
Serve the fritters while hot, accompanied by your preferred toppings (refer to suggestions listed below).

Zucchini fritters are most delicious when consumed on the same day they are prepared, but the positive aspect is that they can be kept in a sealed container within the refrigerator for up to 2-3 days. After this period, they tend to become soft and essentially disintegrate.
Can I Store Zucchini Pancakes in the Freezer?
Yes! These are perfect for an easy appetizer that can be prepared in advance. Once they have cooled completely, arrange the fritters in a single layer on a baking sheet. Put them in the freezer for a few hours until they are fully frozen. Once frozen, transfer them to a freezer-safe, airtight bag or container. The fritters will remain fresh for up to 2 months in the freezer. Let them thaw before reheating in the oven, skillet, or air fryer.
