Donovan Family Confections to Open in Bigger Space Soon
WALLINGFORD – The proprietors ofDonovan Family ConfectionsThey expressed sadness at missing Valentine's Day, as the renovation of their new store is taking longer than expected, but are eager to open soon.
"It's been really difficult for our confectionery to miss Valentine's Day, which is a major event for us, so we're looking forward to a strong return," said chocolatier Katie Donovan, who operates the business alongside her mother, Sue Donovan.
Donovan Family Confections surpassed the capacity of their previous candy store located at 850 South Colony Road inWallingford.They shut down on December 23 and got ready to relocate approximately two miles away to the new location at Tower Plaza, situated at 600 North Colony Road.
"We experienced lines that lasted two and a half hours for five hours just before Christmas, which definitely required us to make this significant move for our development," Katie Donovan stated.
The couple had hoped to be in the new store by early January, but there were "many challenges" with the move, pushing the updated schedule to late February, she mentioned. An official opening date will be determined once town permits are finalized.
"But we're nearly at the end and very eager to reopen," Katie Donovan said.
The new location will feature twice the area, she mentioned.
When they open, they will serve their iconic green, four-leaf clover chocolates for St. Patrick's Day.
"People really enjoy our Irish Collection each year, so we decided to keep our Jameson bonbon as a signature flavor available throughout the year," she said.
The store is famous for its vibrant bonbons, which feature delicate Belgian chocolate shells containing a range of flavors and are "painted" using various colors of cocoa butter.
"We poured a great deal of passion into our work," she stated.
The beginnings of Donovan Family Confections are somewhat unique.
Katie Donovan received a diagnosis of a rare swallowing disorder in 2012, which required her to follow a liquid diet. In 2016, when she was 20 years old, she had an esophagectomy combined with a gastric pull-up procedure. She concentrated on her rehabilitation from 2016 to 2020.
She had difficulty keeping solid food down, yet she craved her favorite desserts, she mentioned. Therefore, her parents set out to develop the "ideal bite-sized treat," and the outcome was chocolate, as it melts quickly in the mouth.
At the start, her family began selling to relatives and acquaintances through social media. The company expanded when they launched their first store in 2023, she mentioned.
The company is a "genuine family endeavor," she mentioned. Her mother is the proprietor, while she develops flavors and creates designs in the kitchen. Her brother, Pat Donovan, and father, Dave Donovan, assist with sales and work in the store, along with her boyfriend, John Savenelli.
Even though there are at least 20 unique flavors available, the best-selling option remains the very first one she created: dark chocolate caramel sea salt.
It's one of our top-selling items, and it's this stunning blue," she said. "It's definitely eye-catching every time someone enters.
One of her and her mother's favorite treats is a dark chocolate, basil, yuzu candy.
We incorporate fresh basil into our dark chocolate ganache," she explained. "We also add a yuzu gel on top, which is similar to a blend of lemon and lime. It's a Japanese fruit and absolutely amazing.
Currently, Katie Donovan is thrilled to start and can't wait to use the chocolate enrober, industrial candy-making machinery from Denmark that can "coat just about anything we desire in a delicious layer of chocolate," she mentioned. It is anticipated to arrive any day.
